Seasoning Ingredients

  • 1/3 Tbsp Soy Sauce for Soup (or a little regular soy sauce)
  • 1 tsp Salt (adjust to taste)
  • 1/3 Tbsp Sesame Seeds (for extra savoriness)
  • 1/3 Tbsp Sesame Oil (enhances the fragrant aroma!)

First, thoroughly wash the mung bean sprouts under running water. Bring a pot of water to a rolling boil. Add the washed bean sprouts and blanch for exactly 10 seconds. This is to preserve their crisp texture. If you prefer a softer texture, you can blanch for an additional 20-30 seconds. Be careful not to overcook, as they can become mushy and lose their flavor.

Immediately rinse the blanched sprouts under cold running water to quickly cool them down. This process further enhances their crispness and brightens their color, making them more appealing.

Drain the rinsed sprouts well in a colander, ensuring all excess water is removed. If water remains, the dish might taste bland. You can gently squeeze them with your hands to remove more water.

Place the drained bean sprouts in a bowl. Add all the prepared seasoning ingredients (soy sauce for soup, salt, sesame seeds, sesame oil). Gently mix and toss with your hands until the seasonings are evenly distributed. Since soy sauce for soup can make the color too dark if used excessively, it’s best to add a small amount first and adjust to your taste. You can add about 1/2 tsp of minced garlic for extra flavor, but omitting it is fine to highlight the natural taste of the sprouts.
