  • 200g soybean sprouts
  • 100g imitation crab meat (krab meat sticks)
  • 1 handful green onion (approx. 30g)

Cooking Instructions

Step 1

First, wash the 200g of soybean sprouts thoroughly under running water. Make sure to rinse them well to remove any dirt or debris.

Step 2

Bring about 1 liter of water to a boil in a pot. Once boiling, add 1 Tbsp of coarse salt. The coarse salt helps remove any gaminess from the sprouts and keeps them crisp.

Step 3

Add the prepared soybean sprouts to the boiling water and cover the pot. Blanch for exactly 3 minutes. Avoid overcooking, as this will make the sprouts mushy.

Step 4

Immediately drain the blanched sprouts and rinse them under cold running water to cool them down. This step further enhances their crisp texture. Drain the sprouts thoroughly in a colander or gently shake off excess water by hand.

Step 5

Unwrap the 100g of imitation crab meat and shred it into thin strips. Try to shred them along the grain to prevent them from breaking apart too much.

Step 6

In a large bowl, combine the drained soybean sprouts and the shredded imitation crab meat. Add 2/3 tsp of fine salt, 1 tsp of minced garlic, and 1 Tbsp of sesame oil.

Step 7

Finely chop a handful of green onion. Lightly grind 1 Tbsp of sesame seeds before adding them; this will bring out a richer nutty flavor. You can also add a pinch of black pepper, if desired.

Step 8

Now, gently mix all the ingredients together with your hands, ensuring the seasonings coat the sprouts and crab sticks evenly. Be careful not to mix too vigorously, as this can break down the soybean sprouts.
