Main Ingredients- 200g Winter Greens (Gyeoulcho)
Seasoning Ingredients- 1.5 Tbsp Fish Sauce (Anchovy or Pollock)
- 1.5 Tbsp Gochugaru (Korean Chili Flakes, fine)
- 1 Tbsp Toasted Sesame Seeds
- 1/3 Tbsp Minced Garlic
- 1.5 Tbsp Vinegar
- 1.5 Tbsp Fish Sauce (Anchovy or Pollock)
- 1.5 Tbsp Gochugaru (Korean Chili Flakes, fine)
- 1 Tbsp Toasted Sesame Seeds
- 1/3 Tbsp Minced Garlic
- 1.5 Tbsp Vinegar
Cooking Instructions
Step 1
First, prepare the winter greens. Remove any yellow or wilted leaves. Gently wash the greens under running water and then drain them thoroughly. Be careful not to wash too vigorously, as this can diminish the fresh flavor and aroma characteristic of winter greens.

Let’s make the delicious seasoning for the geotjeori. In a small bowl, combine the fish sauce, gochugaru, sesame seeds, minced garlic, and vinegar for a touch of tang. Mix well. If you prefer not to use minced garlic, you can finely chop some scallions or green onions and add them for a different flavor profile.
