  • 1 Tbsp coarse salt (for blanching)
  • 1/2 onion
  • 3 Cheongyang chili peppers

Seasoning Ingredients

  • 1.5 Tbsp salted fermented shrimp
  • 2 Tbsp anchovy sauce
  • 2 Tbsp plum extract
  • 1.5 Tbsp minced garlic
  • 0.3 Tbsp minced ginger (about 1/3 Tbsp garlic)
  • 3 Tbsp red chili flakes
  • 1 Tbsp allulose (for sweetness adjustment)

Prepare all the ingredients for making delicious sweet potato vine kimchi. Having the fresh vines and seasoning ingredients prepped beforehand will make the cooking process much smoother.

Choose sweet potato vines that are easy to peel. If you are using young sweet potato vines, you can skip the peeling step and simply wash them thoroughly before using. Remove any tough parts.

Fill a pot with plenty of water and bring it to a boil. Once boiling, add 1 Tbsp of coarse salt. Add the prepared sweet potato vines and blanch them for about 3 minutes. Be careful not to over-blanch, as they can become mushy. Immediately remove the blanched vines and rinse them thoroughly under cold running water. After rinsing well, drain them completely in a colander. It’s crucial to remove all excess water, as remaining moisture can dilute the kimchi’s flavor.

Peel the onion and slice it thinly into shreds. Remove the stems from the Cheongyang chili peppers and slice them diagonally. Adjust the amount of chili peppers if you prefer it spicier.

In a bowl, combine all the seasoning ingredients that will give the sweet potato vine kimchi its signature flavor. Add 1.5 Tbsp salted fermented shrimp, 2 Tbsp anchovy sauce, 2 Tbsp plum extract, 1.5 Tbsp minced garlic, 0.3 Tbsp minced ginger, 3 Tbsp red chili flakes, and 1 Tbsp allulose for sweetness. Mix them thoroughly with a spoon to create a delicious seasoning paste.

In a large bowl, add the well-drained sweet potato vines, cut into bite-sized pieces. Add the prepared shredded onion and diagonally sliced chili peppers. Pour all the prepared seasoning paste over them. Ensure everything is ready to be mixed well.
