Main Ingredients- 150g Bean Sprouts
- 5 stalks Chives
- 1 Red Chili Pepper
- 1 Tbsp Fish Sauce (or Anchovy Sauce)
- 1/3 Tbsp Salt
- 1 Tbsp Toasted Sesame Seeds
- 1 Tbsp Sesame Oil
For Blanching Bean Sprouts- 1/2 Tbsp Salt
- 1/2 Tbsp Salt

Step 1
You can enjoy two dishes with just one bag of bean sprouts! When making the cold bean sprout soup, I blanched plenty of bean sprouts, using the broth for the soup and the blanched sprouts for this delightful seasoned dish. Isn’t it economical to make two meals from one ingredient?
Step 2
Bring 1 cup of water and 1/2 Tbsp of salt to a boil in a pot. Once boiling, add the bean sprouts and blanch them for about 3-4 minutes, just until they are slightly softened but still retain their crispness. Be careful not to overcook them, or they will lose their satisfying crunch!
Step 3
Drain the blanched bean sprouts and quickly rinse them under cold or ice water to cool them down. This step is crucial for maintaining their crisp texture. Chop the chives into approximately 5cm lengths and thinly slice the red chili pepper. Remove seeds from the chili pepper before slicing.
Step 4
In a bowl, combine the drained bean sprouts with the chopped chives and sliced red chili pepper. Add 1 Tbsp of fish sauce (or anchovy sauce), 1/3 Tbsp of salt, and 1 Tbsp of sesame oil. Gently mix everything together until the seasonings are evenly distributed. Avoid overmixing or mashing the bean sprouts, as this can make them mushy.
Step 5
Transfer the seasoned bean sprouts to a serving plate. Sprinkle 1 Tbsp of toasted sesame seeds over the top for a nutty aroma and visual appeal. Your crisp and delicious seasoned bean sprouts are now ready to be enjoyed!
