  • 1 Tbsp pureed beet and apple juice
  • 2 Tbsp brown rice vinegar
  • 2 Tbsp fresh lemon juice
  • 1 tsp honey
  • 2 Tbsp strawberry preserve
  • 1/2 tsp salt

Begin by thoroughly washing the fresh sea purslane under running water. Trim it into bite-sized pieces, about 2-3 cm long. Core the apple and slice it thinly into matchsticks. Thinly slice the onion as well; soaking it in cold water briefly after slicing and then draining can help reduce its sharpness, making it more palatable. Place these prepared vegetables into a bowl.

If you have carrot ‘lape’ (a type of shredded carrot preparation), it will add wonderful flavor to the salad. If not, you can julienne carrots, lightly salt and vinegar them for a short while, then drain to achieve a similar texture. Add these to the bowl with the other vegetables.
