A Refreshing and Clean-Tasting Cucumber Salad
A crisp and refreshing cucumber salad is wonderfully delicious when you crave something light and flavorful. This recipe was inspired by a sudden craving for Oi Muchim, so I made a delightfully sweet, sour, spicy, and savory version using just one cucumber from my fridge! ^^
Main Ingredients- 1 cucumber
- 1 tsp sesame oil
Seasoning Ingredients- 2/3 Tbsp gochugaru (Korean chili flakes)
- 1/2 Tbsp toasted sesame seeds
- 1 tsp minced garlic
- 1 Tbsp fish sauce
- 2/3 Tbsp vinegar
- 2/3 Tbsp sugar
- 2/3 Tbsp gochugaru (Korean chili flakes)

Cooking Instructions
Step 1
Wash the cucumber thoroughly. You can either lightly peel the skin with a peeler or leave it on. Cut the cucumber into bite-sized, chunky pieces. (Tip: Cutting the cucumber into thicker slices will help maintain its crispiness.)
Step 2
In a bowl, combine all the seasoning ingredients: gochugaru, toasted sesame seeds, minced garlic, fish sauce, vinegar, and sugar.
Step 3
Stir the seasoning ingredients together thoroughly to create the dressing. (Tip: Making the dressing in advance allows the flavors to meld beautifully.)
Step 4
Add the prepared cucumber pieces to the bowl with the dressing.
Step 5
Gently toss the cucumber with the dressing until evenly coated. Finally, drizzle in the sesame oil and toss lightly once more to add a nutty aroma.
Step 6
Transfer the finished cucumber salad to a serving dish. Enjoy it immediately for the freshest, crispest taste! Any leftovers should be stored in the refrigerator to maintain their freshness.
