Enjoy this delicious Korean radish salad made with fresh autumn radishes, highlighting their crispness and refreshing taste. It’s perfect as a side dish for any meal or as a topping for bibimbap!
Essential Ingredients- 100g Korean radish (preferably fresh and firm autumn radish)
- 30g Scallions (about 3-4 stalks, use fresh ones)
Cooking Instructions
Step 1
First, prepare 100g of fresh Korean radish. Wash the radish thoroughly and then julienne it into thin strips, about 0.2cm thick. Slicing them too thick can prevent the seasoning from penetrating well, while too thin might reduce the crispness, so achieving the right thickness is key.
Step 2
Trim and cut the 30g of scallions (about 3-4 stalks) into lengths similar to the julienned radish. You’ll be using both the white and green parts of the scallions. The white parts add a mild pungency, while the green parts contribute a fresh aroma.
Step 3
Combine the julienned radish and the cut scallions in a large mixing bowl. Ensure the bowl is spacious enough to allow for easy mixing without spilling.
Step 4
Now it’s time to add the seasoning ingredients. Sprinkle 1 Tbsp of Gochugaru, 1 Tbsp of minced garlic, 1 tsp of salt, and 1 tsp of sugar evenly over the radish and scallions.
Step 5
Once all ingredients are in the bowl, gently mix them with your hands. Avoid kneading too vigorously, as this can release too much water from the radish. The trick is to toss and mix gently until the seasoning is evenly distributed. If you prefer a tangier flavor, add 1-2 drops of vinegar and mix again. Your delicious radish salad is ready!
Step 6
Transfer the freshly made radish salad to a serving dish. This vibrant and flavorful salad is a wonderful accompaniment to any Korean meal.
