How to Make Cauliflower Salad with Creamy Sesame Mayonnaise Dressing

Salad Ingredients- 1/2 cauliflower (cut into bite-sized florets)
- 1/3 cucumber (sliced into half-moons or diced)
- 1/3 apple (peeled, cored, and diced)
- 5 walnuts (chopped or left whole)
- 1-2 hard-boiled eggs (optional, quartered or roughly chopped)
Creamy Sesame Mayonnaise Dressing- 6 Tbsp mayonnaise
- 4 Tbsp toasted sesame seeds (ground)
- 2 Tbsp plum extract (or honey)
- 1 Tbsp honey
- 2/3 Tbsp lemon juice (adjust to taste)
- 2 pinches salt
- 60 ml milk (for consistency adjustment)
- 6 Tbsp mayonnaise
- 4 Tbsp toasted sesame seeds (ground)
- 2 Tbsp plum extract (or honey)
- 1 Tbsp honey
- 2/3 Tbsp lemon juice (adjust to taste)
- 2 pinches salt
- 60 ml milk (for consistency adjustment)
Cooking Instructions
Step 1
First, wash the cauliflower thoroughly. Cut the stem end off and then divide the florets into four main sections. You can also trim and cut the thicker stems into bite-sized pieces.

Bring a pot of water to a boil and add 1 teaspoon of salt. Once boiling, carefully add the prepared cauliflower florets and leaves. Blanch for about 3 minutes over high heat. Be careful not to overcook, as it can become mushy.

Immediately transfer the blanched cauliflower to a bowl of cold water to stop the cooking process and preserve its crispness and vibrant color. Drain the cauliflower well in a colander to remove excess moisture.

Prepare the other salad ingredients: cut the cucumber and apple into bite-sized pieces, such as cubes or half-moons. Chop the walnuts or leave them whole, according to your preference.

Now, let’s make the delicious dressing. In a blender, combine the mayonnaise, ground toasted sesame seeds, plum extract, honey, lemon juice, salt, and milk. Blend until smooth. You can adjust the consistency by adding a little more milk if needed, blending until you reach your desired texture.

In a large bowl, combine the prepared cauliflower, cucumber, apple, and walnuts (and optional hard-boiled eggs). Pour the creamy dressing over the ingredients.
