Crisp and Mild Sweet Onion Pickles
How to Make Non-Salty, Crisp Onion Pickles with Fresh Spring Onions
Enjoy the sweet and crunchy texture of spring onion pickles made with fresh onions! They are so addictive because they aren’t too salty. Perfect for any meal!
Ingredients- 15 fresh onions
- 1 handful of garlic scapes (about 50g)
- 3 handfuls of whole garlic cloves (about 50g)
- 4.5 cups water (900ml)
- 2.5 cups soy sauce (500ml)
- 1 cup vinegar (200ml)
- 1 cup sugar (200g)
Cooking Instructions
Step 1
First, prepare the onions by trimming off both ends and peeling them. For the whole garlic cloves, remove the root ends and wash them thoroughly. Place the prepared onions and garlic on a sieve to drain any excess water. This step is crucial to prevent them from becoming mushy later on.
Step 2
Wash the fragrant garlic scapes under running water and drain them well. Now, it’s time to cut all the ingredients into bite-sized pieces. You can cut the onions into quarters or sixths. Slice the garlic scapes and whole garlic cloves into appropriate sizes. (You can also thinly slice the whole garlic cloves if preferred.)
Step 3
Sterilize the glass jars you’ll use for storing the onion pickles. Submerge them in boiling water for about 5-10 minutes. After sterilization, place the jars on a rack or sieve to dry completely, ensuring there is no moisture left inside. This step is key to preserving the pickles for a longer period.
Step 4
Once the glass jars are completely dry, carefully pack the prepared onions, garlic scapes, and whole garlic cloves into them. Try not to overfill the jars, and arrange the ingredients evenly for a better presentation and distribution of flavor.
Step 5
Now, let’s make the delicious pickling brine. In a pot, combine 4.5 cups of water, 2.5 cups of soy sauce, 1 cup of vinegar, and 1 cup of sugar. Bring this mixture to a rolling boil over high heat. Stir occasionally until the sugar is completely dissolved and all ingredients are well combined.
Step 6
Once the brine is boiling vigorously, turn off the heat. Carefully pour the hot brine over the ingredients in the glass jars, filling them to the top. Be cautious as the jars will be hot. Let the jars cool down at room temperature for a while before securely closing the lids. Allow the pickles to sit at room temperature for one day, then transfer them to the refrigerator and let them mature for another 2-3 days. Your crisp and delicious onion pickles will be ready to enjoy! They taste even better after a few days of pickling.
