  • 3 cm piece of Radish
  • 2 cm piece of Carrot
  • 1 stalk of Green Onion

Seasoning
  • 5 Tbsp Anchovy Sauce (Ggannari)
  • 3 Tbsp Plum Extract (Maesilcheong)
  • 1 Tbsp Minced Garlic
  • 1 tsp Ginger Powder
  • 4 Tbsp Red Pepper Flakes (Gochugaru)
  • 3 Tbsp Sesame Oil
  • 2 Tbsp Toasted Sesame Seeds

Cooking Instructions

Step 1

First, let’s prepare the fresh spring cabbage. Remove any wilted outer leaves and trim off any discolored parts to ensure a clean start.

Step 2

Gently cup the spring cabbage leaves together in one hand. Then, use a knife to neatly cut off the tough bottom core. This makes it easy to separate the fresh leaves.

Step 3

Rinse the separated spring cabbage leaves thoroughly in cold running water several times, shaking them gently to remove any dirt or grit. After washing, drain them well in a colander. It’s important to remove excess water so the salad doesn’t become watery and maintains its flavor.

Step 4

Now, let’s make the delicious seasoning. In a large bowl suitable for kimchi, add the wild chives, thinly julienned radish, carrot, and diagonally sliced green onion. Add the anchovy sauce, sweet plum extract, minced garlic, fragrant ginger powder, and spicy red pepper flakes. Mix everything together gently with your hands, ensuring the vegetables are well coated with the seasoning.

Step 5

Add the drained spring cabbage to the seasoned vegetables. Gently toss everything together so the dressing evenly coats the cabbage. (Tip: Taste the salad. If it feels a little bland, you can add a touch of salt or soy sauce to adjust the seasoning to your preference.)

Step 6

Finally, add the nutty sesame oil and toasted sesame seeds. Gently mix one last time to incorporate them. The addition of sesame oil and seeds will enhance the aroma and flavor, making the salad even more delicious.

Step 7

Arrange the carefully mixed Bomdong Geotjeori in a serving dish. This vibrant salad, celebrating the flavors of spring with its crisp texture and savory, slightly sweet, and spicy dressing, is now ready to be enjoyed. It’s a wonderful side dish that will surely awaken your appetite!
