Main Ingredients

  • 1 head of young Napa cabbage (Albaegi Bae Chu)

Sauce Ingredients

  • 1 ladleful of soup soy sauce (approx. 100ml)
  • 1 ladleful of fish sauce (approx. 100ml)
  • 1 ladleful of red pepper flakes (approx. 100ml)
  • 2 Tbsp toasted sesame seeds
  • 1 Tbsp sugar
  • 1 Tbsp minced garlic
  • 1 handful of finely chopped green onions (approx. 50g)
  • 1 Tbsp sesame oil (add just before serving)

Cooking Instructions

First, let’s make the essential sauce for this delicious Geotjeori. In a bowl, combine the soup soy sauce, fish sauce, red pepper flakes, toasted sesame seeds, sugar, minced garlic, and finely chopped green onions. Mix them well until there are no lumps. Stir the sauce until it’s evenly blended.

Wash the young Napa cabbage thoroughly under running water, then gently pat off the excess moisture with your hands. Unlike regular Napa cabbage Geotjeori, the leaves of young Napa cabbage are tender, so you don’t need to salt them beforehand. You can simply shred them and use them right away. This way, the seasoning will quickly seep into the cabbage leaves, making it even more delicious. Shred the cabbage into approximately 0.5cm thick strips for a nice presentation.

Generously spoon the prepared sauce over the shredded young Napa cabbage. Gently toss the cabbage with your hands, ensuring the sauce coats the shreds evenly. Be careful not to toss too vigorously, as this can make the cabbage lose its crispiness. Gently mixing is key.

If you plan to eat it right away, drizzle in 1 tablespoon of sesame oil and toss lightly once more. The fragrant aroma of sesame oil will further enhance the flavor.
