  • 70g fresh chives (trimmed and cleaned)
  • 45g crisp onion

Cooking Instructions

Gently wash the fresh chives under running water. Fill a bowl with plenty of water, hold the chives between your hands, and gently rub them together to remove any dirt or debris. Rinse the chives by changing the water about three times. Shake off excess water and cut them into approximately 4cm lengths.

Peel the onion and slice it into thin strips about 3mm thick. Prepare 0.3 Tbsp (about 1.5 tsp) of minced garlic.

In a mixing bowl, combine all the seasoning ingredients for the chives salad. Add 1.5 Tbsp Jin Ganjang, 0.5 Tbsp gochugaru, 0.4 Tbsp sugar, 0.5 Tbsp sesame oil, and the prepared 0.3 Tbsp minced garlic. Finally, add about 1 Tbsp of toasted sesame seeds generously.

Tilt the bowl slightly and stir the seasoning ingredients with a spoon or spatula until they are well combined. It’s best to mix until the sugar is fully dissolved.

Add the cleaned and cut chives and the sliced onion to the bowl of seasoning. Placing the ingredients on top of the dressing makes mixing easier.

Put on a pair of disposable gloves and gently toss the chives and onion to coat them evenly with the seasoning. Be careful not to mix too vigorously or for too long, as this can make the chives lose their crisp texture.

Taste the salad and if it feels a bit bland, add a tiny pinch of salt and gently toss again to adjust the seasoning to your preference. (You can also adjust the amount of sugar or soy sauce according to your taste.)
