Make the perfect side dish for bibimbap, crisp and flavorful seasoned soybean sprouts, easily and quickly at home. With fresh sprouts and simple seasonings, anyone can make delicious seasoned soybean sprouts. They are perfect as a side dish for rice or as an accompaniment to other meals!

Soybean Sprouts Salad Ingredients

  • 1 bag fresh soybean sprouts (approx. 200-300g)
  • 1/2 white part of a leek
  • 1 Tbsp soy sauce (Guk-ganjang or Jin-ganjang)
  • 1 Tbsp Yeondu (or Guk-ganjang as an alternative)
  • 1 Tbsp plum extract (adjust sweetness to taste)
  • 1 Tbsp sesame oil
  • Generous amount of sesame seeds (1-2 tsp)

Cooking Instructions

Step 1

Prepare 1 bag of fresh soybean sprouts. Rinse them thoroughly under running water to remove any dirt or debris. If the ends are messy, you can trim them slightly.

Bring a pot of water to a rolling boil. Once the water is boiling, add the washed soybean sprouts and blanch them for about 1 to 1.5 minutes, uncovered. Be careful not to overcook them, as they will become mushy and lose their crispness!

Drain the blanched soybean sprouts in a colander and let the water drain naturally without rinsing them under cold water. (Alternatively, you can gently press them with a paper towel to remove excess water. Be cautious not to squeeze too hard, as this can result in a grassy flavor.)

Finely chop the white part of the leek. This will be mixed with the soybean sprouts. If you like, you can add thinly sliced red or green chili peppers for color and a touch of heat.

Add the chopped leek to the drained soybean sprouts.

Now it’s time for seasoning. Add 1 Tbsp of Guk-ganjang (or Jin-ganjang). Adjust the amount of soy sauce to your preference.

Add 1 Tbsp of Yeondu for added umami. If you don’t have Yeondu, you can use Guk-ganjang instead.

Add 1 Tbsp of plum extract for a touch of sweet and sour flavor. You can add a little more if you prefer it sweeter.

Add 1 Tbsp of sesame oil for a fragrant aroma.

Now, gently mix all the ingredients together with your hands. The key is to mix them softly without crushing the soybean sprouts. Finally, sprinkle a generous amount of sesame seeds to complete your delicious seasoned soybean sprouts!
