  • 1 bag of bean sprouts (approx. 200-300g)
  • 2 Tbsp minced green onion

Seasoning

  • 1/3 Tbsp salt (adjust to taste)
  • 1/3 Tbsp minced garlic (add more if you like a stronger garlic flavor)
  • 1 Tbsp sesame oil (the key to nutty flavor!)
  • A pinch of toasted sesame seeds (enhances aroma and appearance)

Cooking Instructions

To ensure your bean sprouts are clean and crisp, start by soaking them in cold water. Gently skim off any thin husks or debris that float to the surface. Then, rinse them thoroughly under running water 1-2 times and lightly drain.

Now, let’s blanch the bean sprouts! Fill a pot with plenty of water and bring it to a rolling boil over high heat. Once the water is boiling vigorously, add 1/3 Tbsp of salt. Adding salt at this stage helps to subtly season the bean sprouts and brightens their color.

With the water boiling rapidly, add the prepared bean sprouts and blanch for just 1 minute to 1 minute and 30 seconds. Bean sprouts are very delicate, so over-blanching will make them mushy and lose their crisp texture. Be sure to watch the time closely!

Immediately after blanching, transfer the bean sprouts to a bowl of cold water to cool them down. Rinsing them in cold water helps to maintain their crispness and prevents them from overcooking from residual heat. Afterward, place them in a colander and drain them thoroughly. Excess water can dilute the flavor of the seasoned dish.

Transfer the well-drained bean sprouts to a mixing bowl. Now it’s time to add the delicious seasonings. Add 1/3 Tbsp of salt, 1/3 Tbsp of minced garlic, and the 2 Tbsp of minced green onion. The green onion adds a wonderful aromatic quality, making the dish even more delicious.
