No-Soak 10-Minute Radish Salad Recipe: Sweet and Tangy!

Autumn radishes are firm and have less water, allowing you to make a wonderfully crisp radish salad in just 10 minutes without any pre-salting! This recipe is perfect for brightening up any meal. Get ready for a side dish that’s utterly addictive!

  • 400g radish (approx. 1/4 of a large radish)

Seasoning (Tablespoon Measurement)
  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Sugar
  • 2 Tbsp Maesilcheong (Plum Extract)
  • 2 Tbsp Vinegar
  • 1 Tbsp Fish Sauce (anchovy or sand lance)
  • 1 Tbsp Minced Garlic
  • 0.3 Tbsp Fine Salt (approx. 1/3 Tbsp)
  • Pinch of Toasted Sesame Seeds

Cooking Instructions

Step 1

First, prepare your fresh radish. Wash it thoroughly, peel off the skin, and then slice it into thin pieces about 0.2cm thick. Next, julienne the radish into thin strips using a mandoline slicer or carefully by hand. Place the julienned radish into a large mixing bowl.

Step 2

Add the 2 tablespoons of gochugaru to the radish in the bowl. At this stage, don’t mix too vigorously. Gently toss the radish so the chili flakes lightly coat the radish strips, giving them a beautiful red hue. This initial step helps the radish absorb the color evenly.

Step 3

Now, add all the remaining seasonings. Combine 1 tablespoon of sugar, 2 tablespoons of maesilcheong, 1 tablespoon of minced garlic, 2 tablespoons of vinegar, 1 tablespoon of fish sauce, and 0.3 tablespoons of fine salt. Gently mix everything together with your hands, ensuring the ingredients are well combined. Taste the salad and adjust the seasoning by adding a little more salt if needed. It’s important to achieve a balanced sweet and tangy flavor.

Step 4

Once the flavor is perfectly balanced, sprinkle the toasted sesame seeds over the salad for a nutty aroma. Give it one final gentle toss. Your delicious radish salad is now ready! Isn’t that incredibly simple?

This sweet and tangy radish salad is best enjoyed with its fresh, vibrant flavors, so I’ve omitted sesame oil. However, if you prefer a nutty finish, feel free to drizzle a small amount of sesame oil at the end. For an added aromatic touch, you can also mix in some finely chopped green onions or minced scallions along with the radish.
