Quick Napa Cabbage Kimchi: Simple Recipe Without Salting
This is a simple kimchi that takes only 10 minutes to make. Enjoy the fresh and crisp taste!
Ingredients- 2 small heads of young Napa cabbage
- 1 bunch of green onions (about 30g)
Seasoning- 2 Tbsp minced garlic
- 1/2 Tbsp minced ginger
- 1 Tbsp sugar (adjust to taste)
- 2 Tbsp fish sauce or soy sauce (any type of fish sauce is fine)
- 2 Tbsp red pepper flakes (adjust for spice level)

Cooking Instructions
Step 1
Prepare 2 heads of young Napa cabbage. The crisp texture of young Napa cabbage is perfect for kimchi.
Step 2
Quarter the young Napa cabbage, cut off the hard core, and wash thoroughly under running water.
Step 3
Drain the washed cabbage well, then cut it into approximately 5cm pieces. Place the cut cabbage in a large bowl. It’s best not to cut it too small to maintain a crisp texture.
Step 4
Add 2 tablespoons of fish sauce (or soy sauce) to the bowl. This is a base for the kimchi seasoning. You can use anchovy fish sauce, sand lance fish sauce, or any other type.

Add 2 tablespoons of red pepper flakes for color and a spicy kick. If you prefer it spicier, you can mix in some Cheongyang red pepper flakes.

Add 1 tablespoon of sugar to provide sweetness. This enhances the umami flavor when combined with the cabbage’s natural sweetness. Adjust the amount of sugar according to your preference.

Clean and chop the green onions into approximately 5cm lengths. The combination of crisp cabbage and green onions will enrich the flavor of the kimchi.

Finally, add 2 tablespoons of minced garlic and 1/2 tablespoon of minced ginger. Gently mix all the ingredients together with the seasoning until well combined. Be careful not to mash the ingredients; gentle mixing is key.

This kimchi is delicious immediately, but for a deeper flavor, let it rest in the refrigerator for about 30 minutes to allow the flavors to meld. Before serving, taste and adjust the seasoning with salt or more fish sauce if needed. Transfer to a container and enjoy! This fresh and crisp kimchi pairs wonderfully with a hot bowl of rice.
