Here’s a nostalgic side dish from my mom: Stir-fried Korean peppers with Doenjang! This is a simple and quick side dish that takes only 5 minutes to make, and it’s incredibly satisfying with every bite. ^^* It’s a dish that grows on you the more you eat it!
Main Ingredients
- 20 Korean chili peppers (Ggwari-gochu)
- 50g carrot
- 0.5 Tbsp salt
Seasoning
- 1 Tbsp Doenjang (Korean soybean paste)
- 0.5 Tbsp minced garlic
- 1 Tbsp honey
- 1 Tbsp sesame oil
- A pinch of sesame seeds

Cooking Instructions
Step 1
Prepare all the ingredients for the recipe beforehand. This will make the cooking process much smoother.

Remove the stems from the fresh Korean chili peppers. Then, slice them diagonally into bite-sized pieces, about 1.5 cm long. This diagonal cut helps the seasoning to penetrate better.
Step 3
Cut the carrot into thin matchsticks, roughly the same length as the sliced chili peppers. The vibrant orange color of the carrot will add a beautiful visual appeal to the dish.

Bring a pot of water to a boil and add 0.5 Tbsp of salt. Add the prepared Korean chili peppers and blanch for just 5 seconds – be careful not to overcook them, as they can become mushy! Immediately remove them from the boiling water, rinse briefly under cold water, and drain thoroughly in a colander. Excess water can dilute the flavor.

In a mixing bowl, combine the drained Korean chili peppers and the julienned carrots. Add the seasoning ingredients: 1 Tbsp Doenjang, 0.5 Tbsp minced garlic, 1 Tbsp honey, 1 Tbsp sesame oil, and a pinch of sesame seeds.

Gently mix everything together with your hands, ensuring the seasoning is evenly distributed. Be careful not to mash the ingredients. Your delicious Stir-Fried Korean Peppers with Doenjang is now ready!
