Let’s make a super simple and refreshing garlic chives salad (Buchu Geotjeori)! It’s a perfect side dish that will surely whet your appetite.
Main Ingredients- 1 bunch fresh garlic chives (approx. 150-200g)
- 1/2 onion, thinly sliced
- A little bit of carrot, julienned (optional)
Savory Dressing- 1.5 Tbsp red chili flakes (gochugaru, adjust to taste)
- 2 Tbsp fish sauce
- 1/2 Tbsp sesame seeds
- 1 Tbsp plum extract (maesilcheong)
- 1/3 Tbsp ginger syrup (or a tiny pinch of minced ginger)
- 1.5 Tbsp red chili flakes (gochugaru, adjust to taste)
- 2 Tbsp fish sauce
- 1/2 Tbsp sesame seeds
- 1 Tbsp plum extract (maesilcheong)
- 1/3 Tbsp ginger syrup (or a tiny pinch of minced ginger)
Cooking Instructions
Step 1
First, rinse the garlic chives thoroughly under running water. Be gentle and avoid rubbing too hard, as this can release a raw, grassy flavor. Shake off excess water.
Step 2
Cut the cleaned garlic chives into bite-sized pieces, about 5 cm (2 inches) long. This length makes them easier to eat.
Step 3
In a bowl, combine all the dressing ingredients: red chili flakes, fish sauce, sesame seeds, plum extract, and ginger syrup. Mix well to create a flavorful dressing. If you don’t have ginger syrup, a very small amount of minced fresh ginger can be used as a substitute.

Add the cut garlic chives to the prepared dressing. Gently toss to coat the chives evenly with the sauce. The key here is a light touch.

Add the thinly sliced onion and julienned carrot to the bowl. (Carrots are optional and mainly for color.) Mix them in with the chives and dressing.
