  • 1 bunch fresh garlic chives (approx. 150-200g)
  • 1/2 onion, thinly sliced
  • A little bit of carrot, julienned (optional)

Savory Dressing

  • 1.5 Tbsp red chili flakes (gochugaru, adjust to taste)
  • 2 Tbsp fish sauce
  • 1/2 Tbsp sesame seeds
  • 1 Tbsp plum extract (maesilcheong)
  • 1/3 Tbsp ginger syrup (or a tiny pinch of minced ginger)

Cooking Instructions

First, rinse the garlic chives thoroughly under running water. Be gentle and avoid rubbing too hard, as this can release a raw, grassy flavor. Shake off excess water.

Cut the cleaned garlic chives into bite-sized pieces, about 5 cm (2 inches) long. This length makes them easier to eat.

In a bowl, combine all the dressing ingredients: red chili flakes, fish sauce, sesame seeds, plum extract, and ginger syrup. Mix well to create a flavorful dressing. If you don’t have ginger syrup, a very small amount of minced fresh ginger can be used as a substitute.

Add the cut garlic chives to the prepared dressing. Gently toss to coat the chives evenly with the sauce. The key here is a light touch.
