  • 100g fresh chives
  • 100g onion
  • 20g perilla leaves (kkaennip)

Flavorful Seasoning

  • 1 Tbsp sugar
  • 1 Tbsp anchovy sauce (myeolchi aekjeot)
  • 1 Tbsp red pepper flakes (gochugaru)
  • 2 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds (for garnish)

Chives Washing Solution

  • 2 Tbsp vinegar
  • 1 Liter water

Cooking Instructions

Step 1

First, rinse the fresh chives thoroughly under running water. Then, in a bowl, mix 1 liter of water with 2 tablespoons of vinegar. Soak the chives in this solution for about 10 minutes. This step helps to clean the chives and keep them fresh and crisp.

Remove the chives from the vinegar water and drain them very well in a colander to remove excess moisture. Cut the drained chives into approximately 5cm (about 2 inches) lengths.

Thinly slice the onion. Cut the perilla leaves (kkaennip) into similar lengths as the chives for a cohesive look and feel.

Now, let’s make the star of our salad: the seasoning sauce! In a large mixing bowl, combine 1 tablespoon of sugar, 1 tablespoon of anchovy sauce, 1 tablespoon of red pepper flakes, and 2 tablespoons of sesame oil. Mix everything together until you have a smooth, flavorful sauce.

To the bowl with the dressing, add the prepared chives, sliced onions, and cut perilla leaves. Pour the delicious seasoning sauce you just made over the vegetables.
