- 1 medium-sized radish
Seasoning Ingredients
- 6 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Fish Sauce (Kanari brand recommended)
- 2 Tbsp Honey
- 1/2 Tbsp Salt (for salting the radish)
- 2 Tbsp Minced Garlic
- 2 Tbsp Chopped Green Onion
- 1/2 Tbsp Toasted Sesame Seeds
- 6 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Fish Sauce (Kanari brand recommended)
- 2 Tbsp Honey
- 1/2 Tbsp Salt (for salting the radish)
- 2 Tbsp Minced Garlic
- 2 Tbsp Chopped Green Onion
- 1/2 Tbsp Toasted Sesame Seeds
Cooking Instructions
Step 1
First, prepare the radish. Use one medium-sized radish. Peel the skin thoroughly. For an even tastier radish salad, we recommend slicing it by hand with a knife rather than using a mandoline slicer. While a mandoline is convenient, hand-slicing can better enhance the radish’s refreshing flavor. It’s also a good idea to use the upper, greener part of the radish for stews and the lower, white part for salads.
Step 2
Place the sliced radish in a bowl and salt it with 1/2 tablespoon of salt for 3 minutes. Here’s a tip to ensure the radish is salted evenly! Place the radish in a colander that allows for good drainage, and put a bowl underneath to catch the liquid. This way, the water released from the radish will drain naturally, making it crispier.
Step 3
While the radish is salting, gently press it with your hands every minute. Also, flip the radish pieces over to ensure even moisture removal and maintain a crisp texture.
Step 4
After about 3 minutes of salting, you’ll see water being released from the radish, just like this. This method is a great tip for salting radishes quickly and easily, so be sure to try it!
Step 5
Now it’s time to mix in all the prepared seasonings. Add 6 Tbsp Gochugaru, 2 Tbsp fish sauce, 2 Tbsp honey, 1/2 Tbsp salt (this is in addition to the salt used for salting), 2 Tbsp minced garlic, and 2 Tbsp chopped green onion to the salted radish. Gently mix everything together, moving from left to right and right to left, until well combined. Isn’t it easy? This seasoned radish salad is a fantastic side dish on its own.
