Ingredients
- 40g walnuts
- 100g tofu
- 2 Tbsp toasted sesame seeds
- 100ml soy milk
- Pinch of salt

Step 1
First, prepare the walnuts. You’ll need about 40g of walnuts. If they have shells, ensure they are cleaned and shelled.
Step 2
Next, prepare the tofu, which will add a smooth texture. Have about 100g of tofu ready. Any type of tofu will work, but silken or soft tofu will create an even creamier consistency.
Step 3
Briefly blanch the prepared tofu in boiling water. This step helps to remove any raw bean flavor and softens the tofu. Blanch for about 1 minute, then rinse under cold water and drain thoroughly.
Step 4
Now, it’s time to blend all the ingredients until smooth. Place the blanched tofu, prepared walnuts, 2 tablespoons of toasted sesame seeds for nutty depth, 100ml of soy milk for a creamy base, and a pinch of salt for seasoning into a blender. Blend until all ingredients are thoroughly combined and the mixture is smooth and homogenous. If the soup is too thick, you can add a little more soy milk. Store the finished cold soup chilled and enjoy its refreshing taste!
