Creamy Tofu White Sauce (No Butter)

Ingredients
- 150g silken tofu
- 300ml milk
- 50ml water
- 2.5 Tbsp all-purpose flour
- Pinch of salt
- Pinch of black pepper

Prepare the silken tofu. This is the star ingredient that will lend a creamy richness and delightful flavor to your sauce, all without butter.

Place the silken tofu in a bowl and mash it thoroughly with a whisk or spatula until it’s completely smooth and lump-free, achieving a consistency similar to cream cheese.

In a saucepan, combine the fresh milk and water. If you have consommé or chicken stock, feel free to add it now for an extra layer of flavor (optional).

Gently sift the all-purpose flour into the saucepan with the milk and water mixture. Whisk lightly at first to prevent lumps from forming.

Whisk the flour into the liquid until fully incorporated, then place the saucepan over medium heat. Warm the mixture slowly, stirring constantly to prevent scorching or clumping as it begins to thicken.

Once the sauce starts to thicken slightly and reaches a smooth, velvety consistency (this stage is often called a ‘roux’), reduce the heat to low.
