  • 1/4 Bell Pepper (using different colors adds visual appeal)
  • 1/3 Eggplant
  • A small piece of Zucchini or Yellow Squash
  • 1 Shiitake Mushroom (fresh or rehydrated dried)
  • 1 Tomato (cherry tomatoes also work well)

Seasoning & Topping

  • 2 Tbsp Ketchup (adjust to taste)
  • 150g Mozzarella Cheese (shredded)
  • 1 Tbsp Olive Oil
  • 1 tsp Salt
  • A pinch of Black Pepper

Cooking Instructions

Drain the silken tofu by placing it in a sieve for about 10 minutes. Gently mash the tofu with a fork or spoon until it’s soft and crumbly. This step ensures a smoother texture for your gratin.

Wash and prepare your fresh vegetables. Finely dice the eggplant, shiitake mushroom, bell pepper, zucchini, and tomato. Chopping the vegetables into uniform sizes will help them cook evenly and contribute to a better texture. (e.g., 1/3 eggplant, 1 shiitake mushroom, 1/4 bell pepper, a small piece of zucchini, 1 tomato)
