Ingredients
  • Canned corn 280g (drained)
  • Steamed sweet potato 1 medium
  • Water 100ml
  • Vuco Coconut Milk Premium 400ml
  • Vanilla extract 1/2 tsp
  • Salt to taste
  • Powdered sugar a little
  • Fresh herb leaves a little (for garnish)
  • Edible flower petals a little (for garnish)

Cooking Instructions

Step 1

First, drain the canned corn thoroughly using a sieve and rinse it lightly under cold water. This step helps to reduce any can flavor and enhances the fresh taste of the corn.

Step 2

Peel the steamed sweet potato and cut it into approximately 1.5cm cubes. Using a pre-steamed sweet potato makes this recipe incredibly convenient, as it eliminates the need for boiling.

Step 3

Combine the drained corn, cubed sweet potato, and 100ml of water in a blender. Blend on a low setting until you achieve a very smooth, pureed consistency, ensuring no lumps remain.

Step 4

Pour the corn and sweet potato puree into a saucepan. Add the 400ml of Vuco Coconut Milk Premium. Bring the mixture to a gentle simmer over medium heat, then reduce to low and cook for another 1-2 minutes. Afterward, strain the mixture through a fine-mesh sieve for an ultra-smooth soup texture.

Step 5

Return the strained soup to the saucepan. Place it over low heat and stir continuously with a spatula to prevent sticking to the bottom, allowing it to simmer gently. This is where you’ll achieve the desired soup consistency.

Step 6

The ideal consistency is when the soup flows slightly. If it’s too thick, add a little more Vuco Coconut Milk Premium until you reach your preferred thickness. If it’s too thin, dissolve a small amount of cornstarch in cold water and gradually add it to the soup while stirring, simmering until thickened. (When using cornstarch, always mix it with cold water first before adding to the hot soup).

Step 7

Season the soup with a pinch of salt. For an added touch of sweetness and aroma, stir in 1/2 tsp of vanilla extract, or to your preference. Mix well to combine everything, then immediately turn off the heat. Be careful not to add too much vanilla extract, as its flavor can become overpowering.

Step 8

While the soup is cooking, prepare the milk foam. In a small bowl, combine a little Vuco Coconut Milk Premium with powdered sugar. Use a hand blender or whisk to whip it into a light, frothy foam. Continue whipping until you have a rich, creamy foam.

Step 9
