  • Occasion : Everyday
  • Cooking : Boil / Simmer
  • Servings : 2 servings
  • Difficulty : Beginner

Ingredients
  • 300g Chicken breast
  • 1 Sweet potato (medium size)
  • 1 Green bell pepper
  • 1/4 Onion
  • 500ml Heavy cream
  • 1 Tbsp Cooking oil
  • 2 Tbsp Cooking wine (Cheongju or Mirin)
  • 1 tsp Minced garlic
  • Salt to taste
  • A pinch of Black pepper
  • 1 Tbsp Grated Parmesan cheese
  • 1 Korean green chili pepper (optional)

Cooking Instructions

Step 1

Begin by preparing all the ingredients for your sweet potato cream stew according to the recipe’s measurements. Cut the chicken breast into bite-sized pieces and wash and prepare the vegetables.

Step 2

Peel the sweet potato and slice it into rounds approximately 1.5 cm thick.

[**My Personal Tip!**] Slicing the sweet potatoes into rounds, rather than cubes, helps prevent the edges from becoming too mushy as they cook and presents a more aesthetically pleasing final dish. Using a decorative round cutter (like one for fruit salad) can make this step even easier and prettier.

Step 3

Wash the onion and green bell pepper, remove the seeds, and chop them into roughly 2 cm pieces. Cutting the vegetables to a similar size ensures they cook evenly.

Step 4

Season the prepared chicken breast with 2 tablespoons of cooking wine, 1 teaspoon of minced garlic, a pinch of salt, and a pinch of black pepper. Gently toss to combine. The cooking wine and garlic help to eliminate any gamey odor from the chicken and enhance its flavor.

Step 5

Heat 1 tablespoon of cooking oil in a pan over medium heat. Add the seasoned chicken breast and sauté until the exterior is lightly browned. The chicken doesn’t need to be fully cooked through at this stage.

Step 6

Once the chicken is partially cooked, add the sliced sweet potatoes and chopped onion to the pan. Continue to sauté with the chicken. Stir-frying the onion until it becomes translucent will bring out its natural sweetness, further enriching the stew’s flavor.

Step 7

Now, pour in 500ml of heavy cream and 100ml of water. Season with salt to taste. Let everything simmer over medium-low heat until the ingredients are tender. Covering the pot while it simmers will help the sweet potatoes cook more thoroughly and become softer.

Step 8

[**My Personal Tip!**] After adding the heavy cream and once the ingredients are somewhat tender, stir in 1 tablespoon of grated Parmesan cheese. Allow it to melt and blend evenly into the stew. This step significantly deepens the flavor and creates a richer, more savory taste compared to not using cheese. It elevates the stew to a truly gourmet level!

Step 9

Finally, add the chopped green bell pepper to the stew and cook for just a little longer. It’s important not to overcook the bell pepper to maintain its delightful crispness.

Step 10

[**My Personal Tip!**] For a touch of gentle heat, finely chop one Korean green chili pepper and add it to the stew. The mild spiciness of the chili cuts through the richness of the cream, providing a refreshing balance and making the stew even more intriguing. This is especially great if you enjoy a little kick!

Step 11

And there you have it! A simple yet elegant and creamy sweet potato stew, ready to be enjoyed. Serve it warm, perhaps with crusty bread or rice, for a truly satisfying meal.

Step 12

I was amazed at how easily such a delicious and sophisticated dish could be made at home with these simple ingredients. The creamy combination of sweet potato and cream was absolutely delightful. The satisfying crunch of the bell peppers and onions, along with the protein from the chicken, made this a perfectly balanced and hearty meal. It’s a wonderful option for a family dinner, a delightful children’s snack, or even for a special occasion!
