Ingredients
  • Block curry roux (for 3 servings)
  • 1 medium onion
  • 10 shrimp
  • 4-5 cloves garlic
  • A little butter (approx. 1 Tbsp)
  • 2 servings cooked rice

Cooking Instructions

Step 1

Start by thoroughly cleaning the shrimp. Peel them, devein if necessary, and rinse well under cold water. Pat them dry with a paper towel, then season lightly with salt and pepper. Let them marinate while you prepare the other ingredients; this enhances their flavor.

Step 2

Peel and thinly slice one medium onion. Slicing it thinly will help it soften and caramelize beautifully as it cooks, contributing a lovely sweetness to the curry.

Step 3

Mince or thinly slice 4-5 cloves of garlic. For a delightful garnish, we’ll make crispy garlic flakes. Place the sliced garlic in an air fryer basket and cook at 200°C (390°F) for about 10 minutes, or until golden and crisp.

Step 4

These crispy garlic flakes add a wonderful texture and aroma. They serve as a beautiful garnish for the finished curry. However, if you’re short on time or prefer not to make them, feel free to skip this step.

Step 5

In a pan, melt a little butter (about 1 tablespoon) over medium heat. Add the thinly sliced onions and begin to sauté.

Step 6

Cook the onions until they become soft and translucent. For an even richer and sweeter flavor, continue to cook them slowly, stirring occasionally, until they caramelize (about 20-30 minutes). This slow cooking process is key to developing a deep flavor base.

Step 7

Once the onions are nicely softened and caramelized, add water to the pan. Refer to the curry package for the recommended amount of water for 3 servings, and bring it to a simmer.

Step 8

While you can use the sautéed onions as they are, for an extra-smooth texture that’s especially appealing to children, you can blend the cooked onions with an immersion blender or transfer them to a regular blender and purée until smooth. This creates a velvety base for the curry.

Step 9

Return the puréed onion mixture to the pot and continue to simmer gently over low heat. This allows the flavors to meld together beautifully, creating a smooth and creamy curry base.

Step 10

In a separate pan, add a touch of olive oil and cook the marinated shrimp for a few minutes on each side until they turn pink and are cooked through. Be careful not to overcook them, as they can become tough. The aroma of the cooking shrimp will be delightful.
