Roll Ingredients- 2 packs fresh salmon (sashimi-grade or smoked salmon)
- 1 bowl cooked rice
- 1 ripe avocado
- 1/2 crisp cucumber
- 5-6 fresh perilla leaves (깻잎)
- 2 sheets of dried seaweed for kimbap (김밥김)
Rice Seasoning (Sushi Vinegar)- 2 Tbsp rice vinegar
- 1 Tbsp sugar
- 2 pinches salt
Holograin Sauce- 3 Tbsp mayonnaise
- 1 Tbsp whole grain mustard
- 1 Tbsp finely minced onion
- Pinch of black pepper
- 1 Tbsp oligodang (or honey)
- 1 Tbsp fresh lemon juice
- 2 Tbsp rice vinegar
- 1 Tbsp sugar
- 2 pinches salt
Holograin Sauce- 3 Tbsp mayonnaise
- 1 Tbsp whole grain mustard
- 1 Tbsp finely minced onion
- Pinch of black pepper
- 1 Tbsp oligodang (or honey)
- 1 Tbsp fresh lemon juice
Cooking Instructions
Step 1
Wash the perilla leaves and cucumber thoroughly under running water. Drain them well in a colander. Ensuring they are dry is crucial to prevent the rolls from unraveling and to achieve a neat finish.
Step 2
Let the freshly cooked rice cool down slightly so it’s warm, not hot. If the rice is too hot, it can make the seaweed wrapper soggy.
Step 3
In a small bowl, combine 2 Tbsp rice vinegar, 1 Tbsp sugar, and 2 pinches of salt. Stir until the sugar and salt are completely dissolved to make the sushi vinegar. Add this mixture to the cooled rice and gently mix with a rice paddle, being careful not to mash the grains, to create sushi rice.

Finely julienne the washed and dried perilla leaves. These will add a wonderful texture and aroma to your rolls.

Cut the cucumber in half lengthwise, then use a spoon to scrape out the seeds. Slice the cucumber into long, thin strips. Removing the seeds helps reduce excess moisture.

Peel and pit the ripe avocado, then slice it thinly lengthwise. Adjust the length of the slices to fit your rolls.

If using sashimi-grade salmon, slice it into long, thick pieces suitable for rolling. If using smoked salmon, simply slice it lengthwise as is.

Lay a sheet of plastic wrap generously on your cutting board (instead of a bamboo mat). Spread the sushi rice thinly and evenly over the plastic wrap, ensuring it covers the area where the seaweed will be placed. Aim for a rice layer of about 0.5 cm thickness.

Place the kimbap seaweed sheet on top of the rice. Layer your prepared fillings (perilla leaves, cucumber, avocado, and salmon) over the seaweed, covering it completely. Be generous with the salmon for an even richer flavor.

Hold the plastic wrap firmly at the bottom and carefully roll the ingredients upwards, keeping everything compact and preventing it from falling apart. Gently slide the plastic wrap as you roll to ensure the roll is tight and holds its shape. This technique creates a ‘nude roll’ with the rice on the outside. Place the seam side down to let it set.

Alternatively, you can create ‘rice-less rolls’ by placing salmon and the sliced vegetables and avocado directly on the seaweed, then rolling them up without any rice. This gives you two delicious variations of salmon avocado rolls to enjoy.

In a bowl, combine 3 Tbsp mayonnaise, 1 Tbsp whole grain mustard, 1 Tbsp minced onion, a pinch of pepper, 1 Tbsp oligodang (or honey), and 1 Tbsp lemon juice. Mix until smooth. You can use it as a dipping sauce or drizzle it lightly over the rolls.

To slice the rolls cleanly, keep the plastic wrap on while cutting. Lightly dampen a sharp knife or use a serrated knife (like a bread knife), and gently cut through the roll. Once sliced, remove the plastic wrap and arrange the pieces attractively on a serving plate.
