Creamy Rosé Tteokbokki (Easy Meal Kit Hack)
Effortless Rosé Tteokbokki: Whip it up at home with a Tteokbokki Meal Kit! (Rice Cakes/Spicy)
This recipe shows you how to easily and quickly make a creamy, sweet, and spicy Rosé Tteokbokki at home using a convenient store-bought tteokbokki meal kit.
Essential Ingredients- 1 Tteokbokki Meal Kit (includes rice cakes and sauce)
- 1 ripe tomato
- 1 onion
- 1 Tbsp minced garlic
- 1 Tbsp olive oil
Cooking Instructions
Step 1
First, rinse the tteokbokki rice cakes under running water to separate any that are stuck together. Refer to your meal kit’s instructions for any specific soaking times, as this can vary by rice cake type.
Step 2
Cut the fish cakes into bite-sized pieces. Briefly blanching them in hot water (like giving them a quick shower) helps remove excess oil, resulting in a cleaner flavor.
Step 3
Wash the ripe tomatoes thoroughly, remove the seeds, and dice them finely. Peel the onion and slice it thinly into slivers.
Step 4
If using ham or bacon, cut them into bite-sized pieces as well. These ingredients will add extra depth of flavor.
Step 5
Heat olive oil in a pan over medium-low heat. Add the minced garlic and sliced onions, and sauté until the onions become translucent and fragrant. Be careful not to burn the garlic.
Step 6
Add the diced tomatoes to the pan and cook along with the onions. While the traditional method involves blanching and peeling the tomatoes first, for convenience, you can add them with the skin on. If the skins detach during cooking, simply remove them. Continue to cook until the tomatoes soften and break down.
Step 7
Add the rice cakes, meal kit sauce, and the sautéed vegetables to the pan. Pour in the milk or heavy cream (or a mixture of both), adjusting the amount to achieve your desired consistency and flavor. Bring the mixture to a gentle simmer, allowing the flavors to meld.
Step 8
Now, add the cut ham or bacon. Stir continuously with a spatula while the tteokbokki simmers until the rice cakes are tender and everything is well combined with the creamy rosé sauce. Stirring prevents sticking and ensures even cooking.
Step 9
Transfer the beautifully cooked Rosé Tteokbokki to a serving dish. Top generously with mozzarella cheese, if desired. The cheese will melt into the sauce, adding a wonderfully rich texture.
Step 10
Sprinkle a pinch of parsley flakes over the top for a touch of color and freshness. Serve with pickles or a side salad to complete this delightful meal or snack.
