Shrimp Balls

  • 10 frozen shrimp, peeled and deveined
  • 1/2 Tbsp egg white
  • 1.5 Tbsp potato starch
  • 1 pinch grated ginger
  • 2 pinches salt

Rosé Sauce

  • 130ml store-bought tomato sauce
  • 200ml milk (or heavy cream)
  • 1/2 onion
  • 2 strips bacon
  • 1 mini king oyster mushroom
  • 1 Korean green chili pepper
  • 2 Tbsp canned corn kernels
  • 1/2 Tbsp minced garlic
  • Pinch of black pepper

Cooking Instructions

Prepare all your ingredients by measuring and chopping them. Having everything ready beforehand will make the cooking process much smoother.

Bring a pot of water to a boil for cooking the shrimp balls. You can proceed with the next steps while the water heats up.

While the water boils, prepare the other ingredients. Finely mince the shrimp using a food processor or a knife. Cut the bacon into bite-sized pieces, about 0.5cm thick. Dice the onion and mini king oyster mushroom into your desired size. Finely chop the Korean green chili pepper (removing seeds if you prefer less spice).

In a bowl, combine the minced shrimp, 1.5 Tbsp potato starch, 1/2 Tbsp egg white, 1 pinch of grated ginger, and 2 pinches of salt. Mix and knead the ingredients thoroughly until they form a cohesive, slightly sticky mixture.

Carefully drop spoonfuls of the shrimp mixture into the boiling water. Let them cook for about 3 minutes. They don’t need to be fully cooked at this stage, as they will finish cooking in the sauce.

Heat a little oil in a pan over medium heat. Add the bacon and cook until crispy and lightly browned. Once the bacon fat renders, add the diced onion, minced garlic, and chopped green chili pepper. Sauté until the onion becomes translucent. Add the sliced mini king oyster mushroom and cook for another minute to release its aroma. (You can omit the mushrooms if you prefer).

Pour in the 130ml of store-bought tomato sauce. Stir and cook for about 1 minute, allowing the sauce to meld with the sautéed ingredients. This step helps to deepen the tomato flavor.

Slowly pour in the 200ml of milk or heavy cream. Whisk continuously and let the sauce simmer gently over medium-low heat for 3-4 minutes, until it thickens slightly to a creamy consistency.

Once the sauce has reached your desired thickness, gently add the par-cooked shrimp balls from the water. Stir in the 2 Tbsp canned corn kernels and a pinch of black pepper. Continue to simmer for another 2-3 minutes, allowing the shrimp balls to absorb the flavors of the rosé sauce. Your delicious Rosé Shrimp Balls are now ready to be served!
