Main Ingredients
  • 300g thick Greek yogurt
  • 1 fresh cucumber
  • A handful of fresh dill
  • 1 clove garlic

Sauce Seasoning
  • 1 Tbsp lemon juice
  • A pinch of lemon zest
  • 2 Tbsp extra virgin olive oil

Cooking Instructions

Step 1

Wash the cucumber thoroughly. You can either grate it using a box grater or julienne it thinly with a mandoline slicer. For a smoother texture, grating is ideal; for a bit more crunch, opt for julienning.

Step 2

Sprinkle a pinch of salt (about 1/2 tsp) over the grated or julienned cucumber and mix gently. Let it sit for about 5-10 minutes to draw out excess moisture. While the cucumber is resting, prepare the other ingredients.

Step 3

Take a fresh, clean lemon and finely zest the yellow part of its peel. Be careful to avoid the bitter white pith.

Step 4

Freshly squeeze the lemon juice needed for the recipe and set it aside.

Step 5

Finely mince the garlic clove. Using freshly minced garlic will impart a much more vibrant and aromatic flavor compared to pre-minced garlic.

Step 6

Wash the fresh dill, pat it dry, and finely chop only the leaves, discarding the tougher stems.

Step 7

Place the salted cucumber in a sieve or wrap it in a cheesecloth and squeeze out as much liquid as possible. Removing excess water is key to achieving a thick and delicious sauce consistency.

Step 8

Now, it’s time to bring all our prepared ingredients together!

Step 9

In a mixing bowl, combine the thick Greek yogurt, the squeezed cucumber, minced garlic, chopped dill, lemon juice, lemon zest, and olive oil. You can adjust the amount of olive oil to your preference.

Step 10

Using a whisk or spatula, gently stir all the ingredients until well combined and smooth. Ensure there are no lumps for a uniform sauce texture. (Optional: For an extra tangy note, a tiny splash of white balsamic vinegar can also enhance the flavor.)

Step 11

Your delicious Tzatziki sauce is ready! You can enjoy it immediately, or for an even better flavor, chill it in the refrigerator before serving. It’s perfect served with fresh vegetable sticks, crackers, or toasted bread.
