  • Green onion 1/2 stalk
  • Onion 1/4
  • Shiitake mushrooms 2
  • Water 500ml

Seasoning Ingredients
  • Soup soy sauce 1 Tbsp
  • Fish sauce 1 Tbsp
  • Minced garlic 1 Tbsp
  • Perilla seed powder 5 Tbsp
  • Salt to taste

Cooking Instructions

Step 1

First, prepare your vegetables. Finely chop the green onion. Thinly slice the onion and the shiitake mushrooms. Having your vegetables prepped will make the cooking process much smoother.

Step 2

Now, let’s start building the broth. In a pot, add 500ml of water. Season it with 1 Tbsp of soup soy sauce and 1 Tbsp of fish sauce. Add the sliced shiitake mushrooms and bring the pot to a boil over high heat. The mushrooms will infuse the broth with a wonderful flavor.

Step 3

Once the water comes to a boil, reduce the heat to medium. Stir in 1 Tbsp of minced garlic and a generous 5 Tbsp of perilla seed powder. Whisk well to prevent clumps and let it simmer. This step is key to achieving that rich, nutty flavor and creamy texture.

Step 4

It’s time to add the soft tofu. You can carefully cut the tofu package in half and gently slide the tofu into the pot. Use a spoon or chopsticks to break the tofu into large, soft chunks. Avoid over-mashing it; we want that signature fluffy texture. Add the sliced onions now as well.

Step 5

Allow the stew to come back to a gentle boil after adding the tofu and onions. Once it’s bubbling, taste the broth. If it needs more seasoning, add a pinch of salt. Remember, the soup soy sauce and fish sauce already provide saltiness, so adjust carefully.

Step 6

Finally, add the chopped green onions and let the stew simmer for another moment. The fresh taste of the green onions will perfectly complement the rich flavor of the stew. Your delicious and creamy perilla seed soft tofu stew is now ready! Enjoy it while it’s hot!
