A Luxurious Appetizer at Home: Hard Roll Soup Filled with Abundant Mushrooms
Mushroom soup is incredibly simple, sometimes even a one-pan dish, yet it boasts a complex and sophisticated flavor and aroma. To elevate this delightful soup, we’ve decided to serve it in hollowed-out hard rolls. It’s a perfect way to enjoy a hearty, satisfying, and elegant starter.
Ingredients- 100g fresh mushrooms, thinly sliced
- 50g onion, thinly sliced
- 300ml milk
- 200ml heavy cream
- 30g butter
- 1 Tbsp all-purpose flour
- 1/4 tsp salt, or to taste
- Freshly ground black pepper, for garnish
Cooking Instructions
Step 1
The first step is to create a roux, which will thicken and enrich our soup. Melt 30g of butter in a saucepan over low heat. It’s important to melt it gently without letting it brown to maintain a delicate flavor.

Once the butter is fully melted, add 1 Tbsp of flour. Whisk constantly with a whisk or spatula until no lumps remain, ensuring the butter and flour are thoroughly combined into a smooth paste.

The mixture might seem a bit thick or pasty at first, but this is perfectly normal. Continue to cook and stir for about 1-2 minutes until it becomes fragrant and slightly toasted.

Prepare the mushrooms by thinly slicing 100g of fresh mushrooms. Their earthy flavor is the star of this soup.

Thinly slice 50g of onion, similar in thickness to the mushrooms. The natural sweetness of the onions will balance the richness of the soup.

Add the sliced mushrooms and onions directly into the saucepan with the roux. Sauté them together until the vegetables soften. Cook over medium-low heat, stirring occasionally.

The butter in the roux helps prevent the vegetables from burning, allowing them to cook gently and release their flavors. Sauté for about 5 minutes to bring out the sweetness of the vegetables.

Gradually pour in 300ml of milk while stirring continuously. This is crucial to prevent any lumps from forming and to create a smooth base for the soup.

Add 200ml of heavy cream according to your preference. The amount of cream can be adjusted to control the soup’s richness and creaminess. Feel free to add more if you desire an extra decadent texture.

Once combined, use an immersion blender to purée the soup until smooth. Alternatively, you can transfer it to a regular blender. Heat gently and season with 1/4 tsp salt. Simmer for another 2-3 minutes to allow the flavors to meld and reach your desired consistency.

Now, let’s prepare the hard rolls that will hold our delicious soup. I used frozen rye hard rolls, which are convenient and bake beautifully. Bake them according to the package instructions until golden brown and slightly crisp. Warming the rolls ensures they pair perfectly with the hot soup.

Carefully slice off the top of each baked hard roll and scoop out some of the soft interior to create a cavity. Generously fill the hollowed-out rolls with the warm mushroom soup.
