Main Ingredients

  • 4 curry roux blocks (approx. 100g)
  • 100g ground pork
  • 1 large onion
  • 3 eggs
  • 500ml water
  • 200ml milk
  • A pinch of black pepper
  • 3 Tbsp cooking oil

Cooking Instructions

Step 1

First, prepare one large onion and slice it thinly. Heat 3 tablespoons of cooking oil in a frying pan over medium-low heat. Slowly sauté the onion until it becomes translucent and releases a sweet aroma. Thoroughly sautéing the onions will significantly deepen the curry’s flavor.

Once the onion has softened and turned golden brown, add 100g of ground pork and a pinch of black pepper. Stir-fry them together, breaking up the pork to prevent clumping. Continue cooking until the pork is fully cooked and has turned brown.

When the ground pork is completely cooked, pour in 500ml of water into the pot. Bring it to a boil over high heat.

As the water starts to boil, skim off any impurities or foam that rise to the surface with a spoon. This will make your curry broth clearer and tastier. Then, add the 4 curry roux blocks and stir gently with a spatula or ladle until they are completely dissolved, ensuring no lumps remain.

Once the curry roux is fully dissolved, pour in 200ml of milk. Adding milk will mellow the saltiness of the curry, lighten its color, and give it a creamier, more sophisticated flavor profile. Mix well.

While the curry is simmering gently over low heat, crack 3 eggs around the edges of the pot. As the eggs begin to cook in the curry broth, gently stir them with chopsticks or a spoon to incorporate them smoothly into the curry. The eggs will break apart, adding a wonderfully soft texture.
