Ingredients

  • 2 Mentaiko (spicy cod roe)
  • 1 bowl of cooked rice
  • 250-300ml milk
  • 1/2 king oyster mushroom
  • 1/4 onion
  • Pinch of black pepper

Prepare the Mentaiko: Carefully remove the membrane from one piece of mentaiko using the tip of a knife. (Tip: Reserve the other piece of mentaiko whole to grill as a topping for the risotto.)

Gently scrape out the roe from the prepared mentaiko with the tip of your knife. Scrape off the roe grains one by one from the membrane.

Prepare the vegetables: Slice the king oyster mushroom into half-moons. Cut the onion quarter, then slice it thinly.

Sauté: Heat a moderate amount of olive oil in a pan. Add the sliced onion and king oyster mushrooms, and sauté until lightly browned and fragrant. Cook until the onions are translucent and the mushrooms release their aroma.

Grill the Mentaiko: Gently push the unpeeled piece of mentaiko to the side of the pan with the sautéing vegetables and grill it. Alternatively, you can grill it separately in another pan. (Tip: Be careful, as the mentaiko might burst and splatter. Grill over medium-low heat to prevent this.)

Remove the grilled mentaiko from the pan and set it aside. Pour the milk into the pan. (Adjust the milk quantity between 250-300ml according to your desired consistency.)

Add Rice: Add the cooked rice to the pan.

Simmer and Adjust Consistency: Add the scraped mentaiko roe to the pan with the rice and mix well. Simmer, adding milk as needed, until the rice grains are tender and the risotto reaches your desired creamy consistency. Start over medium heat, and once it begins to thicken, reduce to low heat, stirring constantly to prevent sticking.

Finish: Once the risotto has reached your desired consistency, season with a pinch of black pepper for extra flavor.
