Homemade Delicious Mashed Potato Salad: A Savory Potato Dish
With an abundance of potatoes gifted from my in-laws, I’ve been enjoying them in stews and side dishes. This time, I decided to create a delightful mashed potato salad for dinner, making our evening meal even more special. Here’s a recipe for this comforting and satisfying potato dish that everyone will love.
Ingredients- 2 Boiled Potatoes (approx. 224g)
- 25g Carrot
- 30g Onion
- 1 Imitation Crab Stick (approx. 30g)
- 4 Tbsp Mayonnaise (3 Tbsp + 1 Tbsp)
- 0.5 Tbsp Allulose (or corn syrup, honey)
- 0.5 Tbsp Lemon Juice
- 1 Pinch Salt
- A dash of Black Pepper
- A sprinkle of Parsley Flakes
Cooking Instructions
Step 1
First, peel the potatoes thoroughly and rinse them under running water. This initial step ensures the main ingredient for our salad is clean and ready.
Step 2
In a pot, combine 700ml of water, 0.7 Tbsp of coarse salt, and 1 Tbsp of sugar. Boiling the potatoes in this seasoned water will infuse them with subtle flavor, making them even more delicious. Cover the pot and bring to a boil over high heat.
Step 3
Once steam starts to visibly escape from under the lid, reduce the heat to medium-low and let the potatoes boil for about 25 minutes. To check for doneness, gently pierce a potato with a skewer or fork; it should slide in easily. If not, continue boiling for a few more minutes.

While the potatoes are boiling, prepare the other ingredients. Finely dice the carrot and onion. Shred or finely chop the imitation crab stick. Having these ingredients finely chopped will help them blend well with the mashed potatoes.

Transfer the hot, boiled potatoes into a large bowl. While they are still warm, use a fork to mash them. It’s best to leave some small chunks for texture rather than mashing them into a completely smooth paste.

Add the finely diced carrot, onion, and chopped imitation crab stick to the bowl with the mashed potatoes. These colorful additions will bring texture and flavor, ready to harmonize with the potatoes.

Now it’s time to add the dressing ingredients that will define the potato salad’s taste. Start by adding 3 Tbsp of mayonnaise. This is the base for the creamy texture.
