Ingredients

  • 4 slices bacon, chopped
  • 1/2 medium onion, finely chopped
  • 500ml (about 2 cups) milk
  • 1 bowl cooked rice (approx. 200g)
  • 2 tablespoons butter total (divided use)
  • 1/2 tablespoon minced garlic
  • 1/2 tablespoon salt (adjust to taste)
  • 2 pinches black pepper (adjust to taste)

Cooking Instructions

Step 1

Begin by preparing your flavor base. Finely chop the half onion into small pieces. Chop the 4 slices of bacon into roughly 1cm (1/2 inch) pieces. Having all your ingredients prepped before you start cooking will make the process much smoother.

Step 2

Heat 1 tablespoon of butter in a pan over medium-low heat until melted. Add the chopped onion and sauté until softened and just starting to turn golden, about 5-7 minutes. Patience here allows the natural sweetness of the onion to develop. Once the onion is fragrant, add the 1/2 tablespoon of minced garlic and cook for another 30 seconds until aromatic, being careful not to burn it.

Step 3

Add the chopped bacon to the pan and cook over medium heat until it’s nicely browned and has rendered some of its fat. Once the bacon is cooked to your liking, pour in the 500ml of milk. Keep an eye on the heat to prevent the milk from boiling over.

Step 4

As the milk comes to a gentle simmer, stir in the remaining 1 tablespoon of butter and the 1 bowl of cooked rice. Break up any clumps of rice and stir gently with a spatula or spoon to combine everything. The mixture will start to thicken as the rice absorbs the milk.

Step 5

Finally, season with 1/2 tablespoon of salt and 2 pinches of black pepper. Taste and adjust the seasoning if needed. Reduce the heat to low and let the risotto simmer gently, stirring occasionally, for about 3-5 minutes, or until the rice is tender and the sauce has thickened to a creamy, luscious consistency. Serve immediately and enjoy your delicious, homemade risotto!
