Begin by separating 2 fresh egg yolks into a clean bowl. Add 1 Tbsp of vinegar, 2/3 Tbsp of fresh lemon juice, 1/2 Tbsp of sugar, and 1/3 tsp of salt. Using an immersion blender (or a whisk), blend all these ingredients together until they are smoothly combined. Continue blending until the yolks are broken down and the mixture turns a pale ivory color.
Step 2
This is the crucial emulsification step. You’ll use 7 Tbsp of brown rice oil. The key is to add the oil gradually, in 4 to 5 additions, rather than all at once. Keep the immersion blender running and slowly drizzle in the oil in a thin stream. Continue blending until the mixture thickens and becomes a smooth, creamy mayonnaise. If it becomes too thick, you can adjust the consistency by adding a tiny bit more vinegar or lemon juice.
