Today is a solo dining day at home. Originally, it was a day off for my father, mother, and me to be together at home, but my parents had plans and went out. It seems to be a couple’s engagement. Since there aren’t many overlapping days off for my father, mother, and me, I was thinking of making something delicious today, but ended up eating alone. Suddenly having to eat alone, the menu changed. I had originally planned to make Jjimdak, which my father likes, but since I had already prepared all the ingredients, I felt it would be awkward to make it just for myself. So, I simply made Creamy Curry Udon. I wonder if the word ‘simple’ is appropriate when making Creamy Curry Udon, but for me, it was simple. Now, I’ll show you how to make Creamy Curry Udon right away.
Ingredients- 3 Tbsp Curry powder
- 2 cups Milk
- 1 cup Heavy cream
- 3 strips Bacon
- 3 Shiitake mushrooms
- 3 cloves Garlic
- 1/2 Onion
- 1 serving Udon noodles
- 2 Tbsp Cooking oil
- A pinch of Parsley flakes
Cooking Instructions
Step 1
Thinly slice the garlic into slivers. Slicing them about 0.3cm thick will help release more flavor.
Step 2
Peel the onion and slice it into strips about 0.3cm thick. This way of slicing makes them tender and pleasant to eat when cooked.
Step 3
Wash the shiitake mushrooms thoroughly, remove the stems, and cut them into quarters. Cutting them too small might reduce the chewy texture.
Step 4
Cut the bacon into 2cm pieces, ready for cooking.
Step 5
Boil the udon noodles in plenty of water for about 1 minute until they are tender. Be careful not to overcook them, as they can become mushy.
Step 6
After boiling, quickly rinse the udon noodles under cold running water to cool them down and remove excess starch. Drain them thoroughly in a colander.
Step 7
Heat 2 tablespoons of cooking oil in a preheated pan over medium-low heat. Add the sliced garlic and onions and sauté until fragrant. Cooking them gently until they release a subtle sweetness is key to developing a great base flavor.
Step 8
Once the garlic and onions become fragrant, add the quartered shiitake mushrooms and the cut bacon to the pan. Continue to sauté until the mushrooms soften and the bacon is lightly browned.
Step 9
When the ingredients are nicely sautéed, pour in 2 cups of milk, 1 cup of heavy cream, and 3 tablespoons of curry powder. Stir continuously while it simmers to create a smooth, creamy sauce. Ensure it thickens to your desired consistency.
Step 10
Once the creamy curry sauce begins to thicken and simmer, add the prepared udon noodles. Gently toss them to coat evenly with the sauce and let it simmer for another minute or two. The noodles will absorb the delicious sauce.
Step 11
When the sauce reaches your preferred thickness, turn off the heat. Sprinkle a pinch of parsley flakes over the top for a beautiful finish. Your creamy curry udon is ready to be enjoyed!
