The idea was to create a curry risotto using coconut cream, and after several attempts, a simple yet delicious risotto recipe was perfected. Rice plays a crucial role in risotto, and the soft, nutty Chamdream rice was the perfect fit. This recipe is rich in flavor and aroma without any added seasonings.

Ingredients
  • Chamdream rice (appropriate amount)
  • Onions (4-5)
  • Garlic cloves (3)
  • Curry powder or curry blocks
  • Coconut cream (1 can)
  • Olive oil
  • Water (500ml)
  • Mozzarella cheese
  • Butter (2 tablespoons)

Cooking Instructions

Step 1

First, rinse the Chamdream rice under running water until clean. Gently wash to avoid breaking the grains. Drain the rice in a colander and let it soak lightly in water for about 10 minutes. This step helps the rice cook up more tender.

Step 2

Wash the onions and garlic cloves. Peel the onions and slice them into about 0.5cm thick pieces or chop them finely so they blend well into the risotto. Mince or thinly slice the garlic. Be careful not to slice the garlic too thinly, as it can burn easily.

Heat a deep pan or pot over medium-low heat and add a little olive oil. Add the prepared onions and garlic, and sauté with a wooden spoon, stirring occasionally. Cook until the garlic is fragrant and the onions begin to turn translucent.

Once the onions start to become translucent, increase the heat to medium and continue to stir-fry. It’s important to sauté the onions thoroughly until they turn a light brown color and begin to caramelize. This process deepens their sweetness and flavor.

When the onions have a nice brown hue, add the butter and continue to sauté, being careful not to burn it. Stir well to combine the butter with the onions. The butter will melt and add richness to the dish.

Now, pour in the 500ml of water, followed by the curry powder (or curry blocks) and coconut cream. Stir well to ensure there are no lumps, then simmer over medium-low heat until the sauce thickens. Once the sauce reaches a good consistency, proceed to the next step.

Spread the soaked Chamdream rice evenly across the bottom of a wide pan or pot.
