Ingredients

  • 450g cooked chickpeas (pre-cooked and ready to use is convenient)
  • 290g onion (about 1 medium onion)
  • 800ml milk (fresh whole milk or low-fat milk works well)
  • 2 slices cheddar cheese
  • 3 Tbsp grated Parmesan cheese (adds depth of flavor)
  • 2 Tbsp butter

  • Salt to taste (adjust according to your preference)

Slice the onion into approximately 0.5 cm thick pieces. Avoid slicing them too thinly, as they might burn. Moderately thick slices work best.

In a large pot, melt 2 tablespoons of butter over medium heat. Add the sliced onions and stir. Spread the onions evenly in the pot and let them cook undisturbed for about 1 minute, then stir again. Repeat this process of spreading and stirring until the onions turn a nice golden-brown color. Once browned, turn off the heat temporarily.

Now, add the prepared cooked chickpeas to the pot.

Pour in 800ml of milk, ensuring the ingredients are submerged.

Using an immersion blender, blend the mixture until it becomes smooth and creamy. You can also use a regular blender. The goal is a lump-free, velvety soup texture.

Add the 2 slices of cheddar cheese and 3 tablespoons of grated Parmesan cheese to the blended soup. Stir well until the cheese is melted and incorporated.
