How to Make Nutty and Healthy Chickpea Soup for Dieting
Chickpeas are renowned for their health benefits, making them a star ingredient for dieting. While raw chickpeas have about 360kcal per 100g, cooked chickpeas significantly drop to 145kcal. Let’s make a simple, creamy, and nutty chickpea soup without using roux or heavy cream. It’s a delightful and satisfying meal perfect for any time of day.
Ingredients- 450g cooked chickpeas (pre-cooked and ready to use is convenient)
- 290g onion (about 1 medium onion)
- 800ml milk (fresh whole milk or low-fat milk works well)
- 2 slices cheddar cheese
- 3 Tbsp grated Parmesan cheese (adds depth of flavor)
- 2 Tbsp butter

Cooking Instructions
Step 1
First, prepare your cooked chickpeas. Chickpeas can be stored in the freezer for up to 3 months when cooked and portioned. (Refer to recipe @7003745 for tips on how to cook chickpeas perfectly!)

Slice the onion into approximately 0.5 cm thick pieces. Avoid slicing them too thinly, as they might burn. Moderately thick slices work best.

In a large pot, melt 2 tablespoons of butter over medium heat. Add the sliced onions and stir. Spread the onions evenly in the pot and let them cook undisturbed for about 1 minute, then stir again. Repeat this process of spreading and stirring until the onions turn a nice golden-brown color. Once browned, turn off the heat temporarily.

Now, add the prepared cooked chickpeas to the pot.

Pour in 800ml of milk, ensuring the ingredients are submerged.

Using an immersion blender, blend the mixture until it becomes smooth and creamy. You can also use a regular blender. The goal is a lump-free, velvety soup texture.

Add the 2 slices of cheddar cheese and 3 tablespoons of grated Parmesan cheese to the blended soup. Stir well until the cheese is melted and incorporated.
