Creamy Cheesy Potato Soup

A smooth and comforting potato soup is a beloved classic for many! Its appeal lies not only in its delicious taste but also in its incredible ease of preparation – you’re guaranteed not to fail. Here, I’ve added cheese to elevate the flavor profile even further for a delightful culinary experience. ^.~
Ingredients- 250g Potatoes
- 90g Onion
- 400ml Milk
- 10g Butter
- 10g Grana Padano cheese (or Parmesan)
- 1g Salt
- Croutons (optional)
- Parsley flakes (for garnish, optional)
Cooking Instructions
Step 1
First, peel and prepare your potatoes. The ‘Golden King’ potatoes I used were wonderfully yellow, just as their name suggests! Any potato variety will work well.
Step 2
Cut the peeled potatoes into manageable pieces that will cook easily. Place them in a pot and cover with just enough water to submerge them. Cook until tender. No other seasonings are needed at this stage.
Step 3
Once the potatoes are fork-tender, carefully lift them out with a slotted spoon and let them cool slightly. It’s important to let them cool a bit before blending to avoid any steam-related accidents.
Step 4
After draining the cooking water, return the pot to medium-low heat. Add the butter and sauté the chopped onion until it becomes translucent. We’ll be blending the onion later, so cutting it into appropriate sizes is key.
Step 5
Once the sautéed onions have cooled slightly, combine them with the boiled potatoes in a blender or use an immersion blender. Add 300ml of the milk first to help achieve a smooth consistency as you blend.
Step 6
Pour the blended mixture back into the pot. Add the remaining 100ml of milk and 1g of salt. Bring the soup to a gentle simmer over medium-low heat, stirring occasionally.
Step 7
As the soup simmers, stir in the Grana Padano cheese (or Parmesan). Allow it to melt completely, which will deepen the flavor and add a lovely richness to the soup.
Step 8
Continue to simmer until the soup reaches your desired consistency. If it’s too thick, add a splash more milk. If it’s too thin, let it simmer a bit longer to reduce. Taste and adjust seasoning if necessary, adding a tiny pinch more salt if needed.
Step 9
