This recipe transforms broccoli into a soft, creamy, and nutty delight when paired with silken tofu. It’s a non-irritating, mild, and savory side dish that will have you coming back for more. Main Ingredients
- 4 heads of broccoli
- 3 king oyster mushrooms
- A small amount of carrot
Seasoning Ingredients
- 1/2 block silken tofu
- 3 Tbsp perilla seeds powder
- 1/2 Tbsp fish sauce (or tuna extract)
- 1/2 Tbsp allulose (or corn syrup)
- 1/3 tsp salt
- 1 Tbsp toasted sesame seeds

Cooking Instructions
Step 1
First, separate the broccoli heads into bite-sized florets. Clean the king oyster mushrooms. Bring water to a boil in a steamer. Once boiling, place the prepared broccoli and mushrooms into the steamer, cover, and steam for just 3 to 5 minutes until tender. Be careful not to overcook, as they can become mushy.
Step 2
Allow the steamed broccoli and mushrooms to cool slightly, then drain them thoroughly in a colander. Excess water can dilute the flavor of the salad. Cut the broccoli into manageable pieces and slice the king oyster mushrooms lengthwise.
Step 3
In a large bowl, combine the steamed broccoli, mushrooms, and finely chopped carrot. Add 1/2 block of silken tofu, crumbling it in. Next, incorporate 3 tablespoons of perilla seeds powder for a nutty flavor, 1/2 tablespoon of fish sauce (or tuna extract) for umami, and 1/2 tablespoon of allulose (or corn syrup) for a subtle sweetness. Gently mix everything together with a spoon or spatula, being careful not to mash the ingredients too much.
Step 4
Taste the mixture and adjust seasoning with 1/3 teaspoon of salt if needed. Finally, sprinkle 1 tablespoon of toasted sesame seeds over the top for an extra nutty aroma.
