Creamy Black Soybean and Perilla Seed Porridge (Seoritae Kongjuk)
How to Make Deliciously Nutty Seoritae Black Soybean Porridge
This recipe features a rich and creamy porridge made by grinding Seoritae black soybeans, known for their bone-health benefits, with fresh perilla seeds. Enjoy a comforting and nutritious meal.
Ingredients- 1 cup soaked Seoritae black soybeans
- 5 Tbsp fresh perilla seeds
- 200g cooked rice (preferably leftover/cold rice)
- 8-10 cups water
- 1/2-1 Tbsp salt (to taste)
Cooking Instructions
Step 1
Begin by preparing the Seoritae black soybeans. Soak 1 cup of dried Seoritae beans in lukewarm water for about 1 hour until softened. After soaking, rinse the beans thoroughly 3-4 times and place them in a pot. Soaking is a crucial first step for achieving a smooth texture in your porridge.
Step 2
Add 5 cups of water to the pot with the rinsed soybeans. Bring the water to a boil over high heat with the lid off. Once boiling, reduce the heat to medium and continue to simmer for 10 minutes. This cooking process helps to mellow any beany flavors and ensures the soybeans are tender.
Step 3
Carefully transfer the cooked soybeans from the pot. In a blender, combine the cooked soybeans, the soybean cooking water, 5 tablespoons of fresh perilla seeds, and 200g of cooked rice. Blend until the mixture is very smooth and creamy. The perilla seeds will add a wonderful nutty aroma and flavor, while the rice contributes to the smooth consistency.
Step 4
Pour the blended mixture back into the pot. Add another 3-5 cups of water, adjusting the amount for your desired consistency. Season with 1/2 to 1 tablespoon of salt, or to your personal taste. Seoritae kongjuk can easily stick to the bottom of the pot, so it’s essential to stir continuously with a spatula over medium-low heat while it simmers gently.
Step 5
You can adjust the final consistency of the porridge by adding more or less water. If you prefer a thinner porridge, add a bit more water. For a thicker consistency, use less water. Once you’ve achieved your preferred texture, your delicious and nutritious porridge is ready to be enjoyed.
