  • 1 medium onion
  • 200g beef (sirloin or similar cut recommended)
  • 600ml water (3 cups)
  • Cooked rice, as needed

  • 10 Tbsp curry powder (100g, based on ‘Baekse’ brand)
  • 200ml milk (1 cup)

First, prepare the cashews. Grind 1/2 cup of cashews in a mortar and pestle until a smooth paste forms. (A blender can also be used.) This step is crucial for making the curry extra creamy and nutty.

Peel and wash the onion. Slice it thinly into strips about 0.5cm thick. This ingredient is vital for adding sweetness and depth to the curry.

Heat 1-2 tablespoons of cooking oil in a pan over medium heat. Add the sliced onions and sauté until translucent. Then, reduce the heat to medium-low and continue to cook slowly, stirring occasionally, until the onions turn a golden brown and are nicely caramelized. This process, taking about 10-15 minutes, deeply enhances the curry’s flavor.

Once the onions are well-caramelized, transfer them to a separate bowl to cool slightly. This prevents them from clumping when added to the curry later.

Reheat the same pan over high heat, adding a little more cooking oil if needed. Add the beef, cut into bite-sized pieces (about 2-3cm), and sear it evenly on all sides until it’s nicely browned. Searing the beef locks in its juices.

Return the sautéed onions to the pan with the seared beef. Pour in 600ml of water. Bring to a boil over high heat, then reduce to medium heat and simmer for about 10 minutes. This allows the flavors of the beef and onions to meld together.

Now, it’s time to flavor the curry! Add 10 tablespoons of curry powder and the ground cashew paste to the pan. Stir well over low heat to ensure there are no lumps, cooking for about 5 minutes until slightly thickened.

Finally, slowly pour in 200ml of milk while stirring continuously. The milk adds a wonderful creaminess and richness to the curry. Continue to simmer for another 2-3 minutes, allowing the sauce to reach your desired consistency.
