  • 2 Boiled Potatoes (medium-sized)
  • 2 Cups Milk (400ml)
  • 1/2 Onion (medium-sized)
  • 1 Piece Butter (approx. 10g)
  • Salt (to taste)
  • Bread slices (optional, for croutons)

First, thoroughly wash and boil 2 potatoes until they are completely tender. Once cooked, peel the skin off the potatoes and cut them into manageable pieces (about 2-3 cm) after letting them cool slightly. This ensures a creamier soup with a smooth texture.

Heat a medium-sized pan over low heat. Add 1 piece of butter and let it melt slowly. Be careful not to burn the butter, and coat the pan as it melts.

Peel and thinly slice 1/2 onion. Add the sliced onions to the melted butter in the pan. Sauté over medium-low heat until the onions become translucent and release their subtle sweetness, which should take about 5-7 minutes.

Once the onions are softened, transfer the sautéed onions to a blender or a pot (if using an immersion blender). Add the prepared boiled potatoes. Pour in 2 cups of milk (400ml) – approximately 1 cup of milk per potato is a good guideline using a standard cup measurement. The amount of milk helps adjust the soup’s consistency.

Now, it’s time to blend everything until smooth. If using a regular blender, let the onions and potatoes cool down a bit before blending, as very hot ingredients can cause the blender lid to open. Blend until you achieve a smooth and uniform consistency. If you’re using an immersion blender, you can blend directly in the pot.

Pour the blended potato soup back into a pot and simmer over low heat. Stir continuously with a spatula to prevent sticking to the bottom. Once the soup starts to bubble, season it with salt.
