Main Ingredients- Thick-cut Bacon 110g
- Fresh Onions 2 medium
- Macaroni (measured by paper cup) 2 cups
- Milk 200ml
- Unsweetened Heavy Cream 250ml
- Water 1L (for boiling macaroni)
Seasoning & Flavorings- Coarse Salt (for boiling macaroni) 2 Tbsp
- Fine Salt (for seasoning) 0.8 Tbsp
- Black Pepper, freshly ground (about 10 twists or 1/4 tsp)

Cooking Instructions
Step 1
In a large pot, bring 1 liter of water to a rolling boil. Add 2 tablespoons of coarse salt. Once boiling, add 2 cups of macaroni. Stir occasionally to prevent sticking and cook for about 10 minutes until al dente.

Before you start cooking, preheat a frying pan over low heat. This gentle preheating ensures ingredients cook evenly without burning.

While the macaroni is cooking, prepare your ingredients: slice the bacon into bite-sized pieces and finely chop the onions. Having everything prepped makes the cooking process much smoother.

Add the sliced bacon to the preheated frying pan first. Cook over medium-low heat, allowing the bacon fat to render and the bacon to become crispy and golden brown. In the meantime, remember to give the boiling macaroni a gentle stir occasionally to keep it from clumping!

Once the bacon is nicely rendered, increase the heat to high and add the chopped onions. Stir-fry quickly until the onions become translucent. At this stage, season with 0.5 Tbsp of fine salt and pepper (about 2 twists) using a regular tablespoon.

When the onions are tender and sweet, add the cooked macaroni directly into the pan. Pour in both the milk and the heavy cream, mixing everything together to create a cohesive sauce base.

Now, let’s enhance the flavor. Add another 0.5 Tbsp of fine salt and about 8 twists of black pepper (using a regular tablespoon) to create a rich and delicious cream sauce.

Stir continuously with a spatula or spoon to prevent the sauce from sticking to the bottom of the pan. Let the sauce simmer gently for about 7 minutes, or until it thickens and becomes slightly reduced, coating the macaroni beautifully.

Turn off the heat and taste the macaroni. If it’s not salty enough, add another two pinches of salt. If it’s too salty, stir in a little more milk to balance the flavor. Achieving the perfect seasoning is key!
