Basic Ingredients
  • 1 ripe avocado
  • 2 Korean green chili peppers (cheongyang peppers)
  • 3 cloves garlic
  • 1/2 onion
  • 1/3 stalk green onion (scallion)
  • 200g pork hind leg meat (thinly sliced for stir-fry)
  • 2 Tbsp cornstarch or potato starch
  • 2 Tbsp sesame oil
  • 1 Tbsp minced garlic
  • 1 Tbsp cooking wine (mirin or similar)
  • 1.5 Tbsp oyster sauce
  • 1 Tbsp corn syrup (oligosaccharide)

Cooking Instructions

Step 1

First, prepare your fresh avocado. Cut it in half, remove the pit, and carefully separate the creamy flesh from the skin.

Step 2

Ensure all traces of the pit are removed from the avocado flesh. Handle the avocado gently to maintain its fresh texture.

Step 3

Cut the prepared avocado flesh into bite-sized pieces, about 2cm cubes or wedges. Be careful not to cut them too small, as they can become mushy during stir-frying.

Step 4

Finely chop the Korean green chili peppers after washing and removing their stems. Adjust the quantity to your preferred level of spice.

Step 5

Thinly slice the garlic cloves. Slicing them thinly will help release more of their aromatic flavor when stir-fried.

Peel and wash the onion, then slice it into thin strips about 0.5cm thick. This will add sweetness and texture to the dish.

Cut the green onion into long pieces, about 4-5cm in length. Using both the white and green parts will add a nice balance.

Pat the pork hind leg meat dry with paper towels to remove excess moisture. Then, coat the pork evenly with 2 tablespoons of starch. This coating will make the pork tender and help it absorb the sauce better.

Now, let’s stir-fry! Heat a pan over high heat and add 2 tablespoons of sesame oil. Add the minced garlic, sliced garlic, green onion, and chili peppers. Stir-fry for about 1 minute until fragrant. It’s important to let the garlic and green onion release their aroma into the oil.

Once the vegetables become fragrant, add the starch-coated pork and 1 tablespoon of cooking wine. Keep the heat on high and stir constantly to break up any clumps of pork. Stir-fry until the pork is no longer pink and is fully cooked.

When the pork is cooked through, add the cubed avocado, 1.5 tablespoons of oyster sauce, and 1 tablespoon of corn syrup.
