Soup Ingredients

  • 1 medium pumpkin
  • 2 medium onions
  • 400ml milk
  • 1 Tbsp butter (approx. 15g)
  • 1 Tbsp honey (or to taste)
  • 1 pinch salt

  • 1 Tbsp butter (approx. 15g)

First, let’s make some delicious croutons to top the soup! Using bread crusts is a great way to minimize waste and add a tasty crunch. Heat a pan over medium-low heat and melt 1 Tbsp of butter. Once melted, add your chopped bread crusts and toast them, stirring occasionally, until golden brown and crisp. Set the finished croutons aside.

It’s important to prepare the pumpkin thoroughly. Gently scrub the pumpkin skin with a little baking soda to help remove any pesticides or impurities. After washing, cut the pumpkin in half, scoop out the seeds and stringy bits, and remove them completely.

Place the prepared pumpkin halves in a steamer basket and cover. Steam for about 10 minutes, or until tender. You’ll know it’s ready when a fork or knife can easily pierce through it. Steaming helps the pumpkin retain its moisture, resulting in a creamier soup.

While the pumpkin is still warm, peel it using a fork or spoon, or cut it into manageable pieces (about 2-3 cm) for easier blending. Peel and thinly slice the onions. Having your ingredients prepped like this will make the next steps much smoother.

Heat a pot or deep pan over low heat and add 1 Tbsp of butter. Once the butter is melted, add the sliced onions and increase the heat to medium. Sauté the onions slowly until they become translucent and slightly golden brown. Caramelizing the onions slightly brings out their natural sweetness and deepens the flavor of the soup.

Add the steamed pumpkin pieces and 400ml of milk to the pan with the sautéed onions. Now it’s time to blend! Use a blender or an immersion blender to process all the ingredients until perfectly smooth and creamy. Ensure there are no lumps for the smoothest texture.

Transfer the smooth pumpkin purée back into the pot or pan and bring it to a simmer over medium-low heat. Once it starts to bubble gently, reduce the heat to low. Season with a pinch of salt and stir in 1 Tbsp of honey for sweetness. You can adjust the amount of honey to your preference. Stir everything together until well combined and heated through. Your delicious pumpkin soup is ready! Serve warm, topped with your homemade croutons.
