Sandwich Ingredients- 4 slices of bread
- 1 mini pumpkin
- 1 Tbsp honey
- 1/2 tsp salt
- 4 Tbsp milk
- 4 Tbsp cream cheese
- A little parsley (optional)
For Cleaning the Pumpkin- 1 Tbsp baking soda
- 1 Tbsp vinegar
- 1 Tbsp baking soda

Cooking Instructions
Step 1
First, let’s clean the pumpkin. Sprinkle 1 tablespoon of baking soda onto the mini pumpkin and scrub thoroughly with a clean sponge. This effectively removes any dirt or wax coating from the skin.
Step 2
After washing, soak the pumpkin in a mixture of 1 tablespoon of vinegar and water for about 5 minutes. This step helps to further sanitize the pumpkin and remove any residual pesticides.
Step 3
Place the pumpkin in a plastic bag with the stem facing down, and microwave for 2 minutes. This initial heating step softens the pumpkin skin, making it much easier to peel.
Step 4
Carefully remove the pumpkin from the microwave. Use a vegetable peeler to remove the skin. You’ll notice it peels off much more easily after the brief microwaving.
Step 5
Return the peeled pumpkin to the plastic bag and microwave for an additional 3 minutes. This ensures the pumpkin is cooked through and becomes wonderfully tender.
Step 6
Once the pumpkin is tender, cut it in half and scoop out the seeds and the fibrous core. A spoon works perfectly for this.

Now, let’s mash the pumpkin. Use a fork or a potato masher to mash the cooked pumpkin until smooth and lump-free. Stir in 1 tablespoon of honey, 4 tablespoons of milk, and 1/2 teaspoon of salt. Mix well until everything is evenly combined to create your pumpkin filling.
